Spanish Rice

Generally Spanish Rice has been made with white rice, but our Test Kitchen took the challenge to create a diabetic Spanish Rice recipe using brown rice. The result? You can enjoy it without guilt, and without sacrificing taste.

What You'll Need

  • 1 cup chopped onion
  • 1 cup chopped bell pepper (any color)
  • 1 can (8-ounce) tomato sauce with roasted garlic
  • 2 cups cooked brown rice

What to Do

  1. Coat a medium nonstick skillet with cooking spray. Over medium-high heat, cook onion and bell pepper until tender, stirring occasionally.

  2. Stir in tomato sauce and brown rice; cook until heated through.
