Thought it was great, although I did add a little sausage. Also don't think it made enough for 4 people. Barely fed my husband and I. Next time I'll just double it.

The bread cubes in this recipe work to absorb the liquid, so that this casserole bakes up like a souffle. If you'd like to try it with potatoes, you would have to reduce the amount of liquid used and add in some flour in order to bind the potatoes. We have not tried it this way, and would not recommend doing it in this particular recipe.

I am not much on the egg substitute. Even though I need the diabetic recipe, how many or what amount of eggs would I use in place of the egg sub? Thanks for your help. It sound great.

In place of the 1/2 cup of liquid egg substitute you can use 2 eggs.

Yes, this cheesy egg casserole will hold up as a leftover dish. It will heat fine in a microwave or toaster oven. Thanks for your question!

This is such a great dish! It comes together in a flash, and my family loves it!
