If you love the taste of a loaded baked potato, but can't fit it into your diabetic diet, then you're going to love this healthier-for-you recipe for Loaded Cauliflower Casserole. We swapped the potato for cauliflower and kept all the same toppings you love, so you can enjoy your favorite flavors without the guilt!

What You'll Need

  • 1 head cauliflower, cut into large pieces (4 to 5 cups chopped)
  • 1 cup low-fat sour cream
  • 1 1/2 cups reduced fat shredded Cheddar cheese, divided
  • 3 scallions, chopped
  • 4 slices turkey bacon, cooked and crumbled
  • 1/8 teaspoon black pepper

What to Do

  1. Preheat oven to 350 degrees F. Coat a 1-1/2 quart baking dish with cooking spray.
  2. In a large pot of boiling water, place cauliflower in a steamer basket; cook 8 to 10 minutes or until tender. Drain well.
  3. In a large bowl, combine cauliflower, sour cream, 1 cup cheese, half the scallions, half the bacon, and the pepper; mix well. Spoon mixture into prepared baking dish and sprinkle with remaining cheese.
  4. Bake 20 to 25 minutes or until heated through. Sprinkle with remaining bacon and scallions and serve.

I really want to try this,but have no oven or microwave , can it be fixed in a slow cooker?

Hello! This can be prepared in a slowcooker. It will probably take 2 to 3 hours on high heat, or 4 to 5 hours on low heat. Hope this helps!

This is very good. Will make again. Used sweet onion as that is what I had on hand. Live alone but this keeps well in refrigerator and is good when reheated.

I have not yet made this Loaded Cauliflower Casserole but I definitely plan on adding the ingredients to my shopping list. I have always loved raw cauliflower but never liked it as a cooked plain side dish , so I am happy to try something that includes two of my favourite foods, cheese and bacon. One question, can you make this up and then freeze it? I am all about freezable casseroles!

Hi there! This can definitely be frozen, but be aware it may be a little watery after thawing.

I made this for a Maundy Thursday church dinner and it was a big hit. However, it does not serve 10 people. 8 at best. I will be keeping this recipe.

I've been told to stay away from pork so I used portobello mushrooms that added a nutty smoked flavor. Plus with my high blood pressure, I cut salt where ever I can.

It looks good. I have to try it and it's really low carbs but seems full of flavor with the bacon and pepper. I just started seeing uncured bacon without nitrates at my grocery store, so I will be using that.
