Looking for a quick 'n easy way to whip up meat loaf? In this recipe, we use our muffin tin to bake up a perfectly portioned weeknight supper that pairs with any side dish of your choosing. It's a simple way to manage your portion sizes!

What You'll Need

  • 1 pound 95-96% lean ground beef
  • 1/2 medium zucchini, shredded
  • 1 egg white
  • 1/2 cup plain bread crumbs*
  • 1/2 teaspoon dried Italian seasoning*
  • 1/4 teaspoon salt
  • 4 tablespoons barbecue sauce*, divided

What to Do

  1. Preheat the oven to 400 degrees. Coat a 6-cup muffin pan with nonstick cooking spray.*
  2. In a large bowl, combine the beef, zucchini, egg white, bread crumbs, Italian seasoning, salt, and 2 tablespoons barbecue sauce; mix lightly but thoroughly. Divide the beef mixture evenly among the 6 muffin cups. Smooth the tops and spread the remaining 2 tablespoons barbecue sauce over the tops.
  3. Bake for 25 to 30 minutes, or until no pink remains and the juices run clear.

Big hit with the kids. Tip don't fill muffin sections completely to the top... leave room for overflow of grease, even if using high grade beef

Delicious! These are not only cute, but they are healthy. Bonus, kids love cute food, and my kids gobbled these up. They don't mind zucchini so I was really hiding that on my husband, because any kind of squash is so so good for you. He did not even notice the zucchini in it, and liked this recipe. Healthy, diabetic friendly, and delicious!

I recently got on a muffin tin craze and I can't wait to make these...with whole egg and the veg, with onion. The individual muffin tin entrees make a more portable meal and look cute doing it! lol

Meatloaf has to have Onion for taste

Test kitchen question - It would help if exact quantity measurement would be used instead of 1/2 medium zucchini, shredded. Same goes for 1 lg onion, sliced or 2 lg grated carrots, etc in other recipes.

Our Test Kitchen Director says you can use a whole egg and onion instead of zucchini without affecting the outcome of the recipe. Enjoy, and let us know what you think of it!

Is it possible to use a whole egg instead of egg white and chopped onion instead of shredded zucchini? I believe the egg yolk would make up for the moisture of the zucchini and the onion for the bulk of the squash.
