This is not another plain ol', boring cabbage soup recipe! A fresh, healthier alternative, our Zesty Cabbage Soup kicks the flavor up a notch! The secret is in adding a bit of green chilies to the mix. It's so delicious, everyone at the table will be asking for more! 

What You'll Need

  • 2 cups finely chopped onion
  • 1 (14-ounce) can diced tomatoes with green chilies
  • 1 (8-ounce) can no-salt tomato sauce
  • 1 teaspoon garlic powder
  • 4 cups water
  • 3 cups shredded green cabbage
  • 1 tablespoon brown sugar

What to Do

  1. Coat a soup pot with cooking spray. Over medium heat, cook onions until tender, stirring occasionally.
     
  2. Meanwhile, process tomatoes in blender or food processor about 30 seconds.
     
  3. Stir tomatoes, tomato sauce, garlic, and water into pot with onions. Bring to a boil, reduce heat to low, and simmer, uncovered, about 15 minutes. Stir in cabbage and brown sugar. Cook for 10 to 15 minutes, or until cabbage is tender.

Very good, but a little spicy for my taste.

This version of cabbage soup is very flavorful, without being too spicy. It is very easy on the budget, since the star of the show is one of the least expensive vegetables that you can buy per pound. Cabbage, as well as other cruciferous vegetables, is a nutrition powerhouse - it reduces inflammation, detoxifies the body, is easy to digest, and has even been attributed to weight loss.

This is a very easy soup to make. You can even buy the diced tomatoes and chillies, if you only want to give them a light chop (by running your knife through the tomatoes, while still in the can). This is a warming soup that would make a very nice recipe, especially in winter. This soup is even better the next day, after you allow the ingredients to settle in together. This recipe would also make an excellent base, if you wanted to add extra ingredients, like chicken or bell peppers, etc.
