All the healthy benefits of butternut squash are packed in this rich-tasting, yet lighter and healthier Creamy Squash Soup. Even though it's perfect for anytime, this one is also nice for impressing company.

What You'll Need

  • 3 cups reduced-sodium vegetable broth
  • 3 cups peeled, seeded, butternut squash pieces (about 2-inches each), (about 2 pounds total)
  • 1/4 teaspoon dried thyme
  • 1/4 cup fat-free half-and-half cream

What to Do

  1. In large, saucepan over medium high heat, bring vegetable broth to a boil; add squash and thyme. Boil slowly until squash is very soft, about 20 minutes. Cool about 10 minutes.

  2. Transfer to food processor or blender and process in batches until smooth. Return to saucepan, stir in cream, and heat over medium-low heat until heated through, stirring occasionally to prevent burning.


 Number of servings will vary due to loss of liquid during cooking.
