Asian Chicken Soup

This simple chicken soup takes on a Far East flair when we add some soy sauce and chopped scallion to the broth. Our diabetic Asian Chicken Soup is a 4-ingredient fave!

What You'll Need

  • 1 container (32-ounce) reduced-sodium, fat-free chicken broth
  • 1 tablespoon reduced-sodium soy sauce
  • 1 cup shredded cooked chicken breast
  • 2 tablespoons chopped scallion

What to Do

  1. In a large saucepan, bring broth and soy sauce to a boil. Add chicken, reduce heat to medium-low, and cook about 5 minutes, or until heated through. Stir in scallions and serve.
