If you love snacking on popcorn as much as we do, then you're going to love our veggie-twist to this classic treat! Our Cauliflower Popcorn is made from a low-carb veggie that's loaded with vitamins! And it's got a light buttery flavor that the whole gang is gonna love!

What You'll Need

  • 1 head cauliflower, cut into bite-sized florets
  • Butter-flavored cooking spray
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

What to Do

  1. Preheat oven to 400 degrees F.
  2. In a large bowl, place cauliflower; spray with butter-flavored cooking spray, while stirring to coat on all sides. Sprinkle with garlic powder, salt, and pepper and toss until evenly coated. Place in a single layer on baking sheet.
  3. Bake 20 to 25 minutes, or until cauliflower begins to brown. Serve warm.

Is cauliflower some miracle vegetable that transforms into rice, potatoes, and popcorn? lol I have got to start trying some of this stuff! I would like to know if it's possible to get this somewhat crunchy, though. I don't expect it to taste like popcorn even though it sort of looks like it, but would a little Panko do the job? How would you get the panko to stick?

I love cauliflower, but this was nothing close to popcorn.....but it will still get eaten.

This is such a good idea. I don't even roast the cauliflower. I cut it into flowerettes and spray with cooking spray. Then I sprinkle on pre-made popcorn seasoning. It's probably too high in sodium, but it's worth it, given the low calories. It's new my go-to snack.
