Yes, kidney beans can be substituted for rice in cabbage soup. We would add in beginning of recipe, not 15 minutes before end of cooking like rice. Hope this helps!

I made this a few weeks ago and LOVED it! I'm single so it's difficult for me to cook large batches and want to eat it over and over again. This freezes really well too. I didn't add the water, so it was more like stew. Also I used a tiny bit of stevia instead of the brown sugar and used a precooked packet of brown rice with lentils. I don't take insulin or pills and had no sugar spikes with this. Very filling and makes loads. Its my go-to now for when I'd like that comforting 'full' feeling. Thanks!

I don't think I have ever eaten cabbage rolls before. The soup sounds great and easier to make than the cabbage rolls. I think I would leave out the lemon juice and brown sugar. I believe eating one cup for a serving would be ok since that would be your meal. Also leaving out the brown sugar would cut out some of the carbs and sugar.

I made this yesterday and will be making it again. I went back for a second bowl at supper. It is easy to make and tastes great. I am not diabetic so I added a little more rice than called for. I also added a diced poblano pepper for a little heat.

If you don't want to use regular rice, you can always try using Cauliflower rice. That would help to make the carbs even lower.

Made for husband because he loves cabbage rolls and gets them rarely. Didn't think I would like but, had 2 helpings as, it was dlicious! Will be making again!!

I love this. I forgot to put the rice in and didn't even realize it until I was giving my sis the recipe. It is good both ways. Love that I can do this in my slow cooker and come home to a nice hot dinner.
