Garlic Lime Pork Chops

Have you been looking for a light and healthy way to prepare pork chops? Using flavorful aromatics is a great way to keep dishes tasty and nutritious. Give our Garlic Lime Pork Chops a whirl and you'll see what we mean!

What You'll Need

  • 2 tablespoons fresh lime juice
  • 1 tablespoon canola oil
  • 3 scallions, thinly sliced
  • 1 tablespoon minced fresh garlic
  • 1 1/2 teaspoon dried thyme, crushed
  • 1/4 teaspoon black pepper
  • 4 pork chops (6 ounces each), well trimmed

What to Do

  1. Preheat oven to 400 degrees F. Coat an 9- x 13-inch baking dish with cooking spray.
     
  2. In a shallow dish, combine the lime juice, oil, scallions, garlic, thyme, and pepper. Dip each pork chop into the lime juice mixture, coating completely/ Marinate for 30 minutes.
     
  3.   Place in the baking dish; bake 15 to 20 minutes, or until desired doneness.

What a light and easy meal to make for the entire family. I love the use of fresh citrus juice. I never thought of using lime for pork. I have used apple in the past and thought of using oranges. I bet the lime gives it a refreshing flavor profile, right? I think I will use this recipe this weekend. Thanks!

What is canola oil please? Don't think we have it in England so a suggestion for substitute please?? This sounds a lovely way to cook pork chops and will make it soon! Thank you. viv

A light oil like vegetable oil will work, as well
