If you thought your diabetic diet couldn't include comfort foods, then think again! This Pork Chop Casserole recipe is perfect for anyone who is watching what they eat. It has all the taste and heartiness of a regular pork chop casserole, but with a lot less fat and sodium!

I'd leave recipe alone title says "chops" not "pieces"! Chops would be easier to serve and more adult looking, i.e. have to use a knife and fork rather than a spoon. Hey, cut it up if you are just feeding children or you could make it even more child friendly by serving it over mash potatoes. When I had three growing children I always cut their meat up after cooking but my husband and I prefer ours chop/steak/filet size. Change the name to Baked Pork Chops if you don't want to call it a casserole.

This essentially sounds like pork chops with a gravy poured over them and then baked in the oven. I would think that to be considered a casserole, that the chops would need to be cubed or cut into small pieces and then combined with the other ingredients listed in the recipe.
