I was pleasantly surprised as to how good this was. I love sweet things so I wasn't sure how good it was going to be. My husband who loves lemon pie was even impressed how good it was. I'll definitely being making this one again!

If you like a crust on your pies but need it to be sugar free, I make mine with crumbled SF shortbread cookies (instead of graham crackers) and a couple TBSP of butter or margarine all mixed together and baked for 8-10 min at 350 F. It makes a great tasting crust and, while not fat free or low calorie definitely sugar free!

This is not bad but if you make it without the reduced fat graham cracker crust, you can cut out the sugar grams and have a lemon sorbet or ice milk dessert. Or, make your own graham cracker crust with a sugar substitute and cut out the sugar and make it an even better diabetic recipe with a crust. There are a LOT of sugar grams in the graham cracker crust that you buy but if you can make it yourself with sugar substitute, you can reduce the sugar and make it a better recipe.
