Apple pie is a classic dessert, but not always the best choice for someone with diabetes. Our Mini Apple Pie Tarts put a unique spin on a dish that is always counted among the most traditional Christmas dessert recipes, so you can you enjoy this favorite treat, too!

What You'll Need

  • 1 cup finely chopped apples, peeled
  • 1 tablespoon chopped dried cranberries
  • 1/4 cup lemon curd
  • 1 package frozen miniature phyllo tart shells
  • 1/4 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/4 teaspoon cinnamon
  • 2 tablespoons cold butter

What to Do

  1. Preheat oven to 350 degrees F.
  2. In a small bowl, combine apple, cranberries, and lemon curd. Spoon into tart shells.
  3. In another bowl, combine flour, sugar and cinnamon; cut in butter until mixture resembles fine crumbs. Spoon over apple mixture.
  4. Place filled tarts on ungreased baking sheet. Bake 15-20 minutes or until golden brown. Cool on wire racks for 5 minutes. Serve warm or at room temperature.

These little muffins sounds so yummy. Thank you for answering the lemon curd questions, I wondered the same exact thing. I think these would be a great idea to take along on a summer picnic. Just pop them in a ziploc bag and place in a cooler and wallah perfect dessert or snack while walking around. Great idea!
