30 Min

Zucchini, green bell pepper, tomatoes and mushrooms add color and health to this pasta dish. Plus, it's so easy it can be made in one pot!

What You'll Need

  • 12 ounces pasta shells
  • 1 pound lean ground turkey breast
  • 1 jar (26 ounces) spaghetti sauce
  • 1 onion, chopped
  • 2 carrots, thinly sliced
  • 1 large zucchini, cut into -inch chunks
  • 1 large green bell pepper, chopped
  • 3 Roma tomatoes, diced
  • 1/2 pound sliced mushrooms
  • 1 teaspoon Italian seasoning

What to Do

  1. Cook the pasta according to the package directions, omitting the salt; drain and set aside.
  2. Meanwhile, in the same soup pot, brown the turkey over high heat, stirring constantly. Add the remaining ingredients and reduce the heat to medium-low; cover and cook for 20 to 30 minutes, or until the vegetables are tender, stirring occasionally.
  3. Add the pasta to the pot; mix well and cook until heated through. Serve immediately.
