They'll be hurrying to the breakfast table as soon as they hear you're cooking up these Flourless Banana Pancakes. All you need is five simple ingredients and a skillet, and you can cook up these low-fat pancakes that everyone is going to go bananas for!

What You'll Need

  • 2 ripe bananas, peeled
  • 3 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon

What to Do

  1. In a medium bowl, mash bananas until mushy. Add remaining ingredients and whisk until combined.
  2. Coat a griddle or skillet with cooking spray and heat over medium-low heat until hot.
  3. Pour 1/8 cup batter for each pancake onto griddle and cook 1 to 2 minutes, or until bubbles form on top. Gently turn over pancakes and cook 1 more minute, or until golden brown. Repeat until all batter is used.

Notes

  • Serve with a sprinkle of confectioners' sugar or a drizzle of sugar-free maple syrup.
  • Make sure you use gluten-free baking powder if you want these banana pancakes to be totally gluten-free!

Terrible recipe. I tried making these twice and because there is no flour as a binder, there's nothing holding these pancakes together so when you put them on the griddle, they don't form and when you try to turn them over, they completely fall apart. Never again!

Hi there. We're sorry to hear you had an unfortunate experience with this recipe. We decided to take this back to the Test Kitchen for a retest and found that our pancakes held together. We pondered what could have caused your experience, and one possible scenario we came up with is that once you pour the 1/8 cup batter the pancake can't be flipped until bubbles form on top. The pancakes won't have the right consistency if they are flipped before then. We hope that helps if you decide to try again. Thank you for your feedback. Maybe I didn't mix well enough, but it taste like banana and egg. Tasted mainly of banana though. Which is a plus. Not sure yet how I feel about these. Will ask others to taste when they get home

I was surprised at how much I didn't miss the flour in these pancakes, the banana's were delicious!
