Tropical Welcome Gelatin

Did you know that the pineapple is a universal symbol of welcome? Well, we're betting that this refreshing and easy Tropical Welcome Gelatin will be a welcome dish at home or as a bring-along, too!

What You'll Need

  • 1 package (.3-ounce) sugar-free lime gelatin mix
  • 1 cup boiling water
  • 1 (8-ounce) can crushed pineapple in juice with liquid reserved
  • 2 tablespoons reduced-fat mayonnaise
  • 1 cup low-fat small curd cottage cheese, drained

What to Do

  1. In a saucepan, combine gelatin mix with boiling water; stir until gelatin is dissolved. Add remaining ingredients; stir to combine.

  2. Pour into a 1-quart square dish and refrigerate until gelatin is set.
