What You'll Need

  • 1/2 pound fresh asparagus, rinsed and trimmed
  • 2 tomatoes, sliced
  • 2 egg whites, cooked, chopped
  • 2 tablespoons low-fat Italian dressing

What to Do

  1. In a skillet, cook asparagus in 1 inch of boiling water 5 minutes, or until crisp-tender; drain.

  2. Divide tomato slices evenly among 4 salad plates. Arrange asparagus spears over tomatoes. Sprinkle egg white over each salad and top with Italian dressing, distributing evenly.
