Banana splits are an all-time fave. Why not lighten up the flavors with these Lighter Banana Split Cupcakes? All your beloved ingredients are still there, so nobody will know the difference!

What You'll Need

  • 1 3/4 cup yellow cake mix
  • 1/2 teaspoon baking powder
  • 3/4 cup mashed ripe banana
  • 6 tablespoons mini semisweet chocolate chips, divided
  • 1 cup fat-free frozen whipped topping, thawed
  • 2 tablespoons sugar-free strawberry jam
  • 6 maraschino cherries, halved

What to Do

  1. Preheat oven to 375 degrees F. Line muffin tins with paper liners.
  2. In a large bowl, combine cake mix, baking powder, and 1 cup water; mix thoroughly. Add banana and stir well. Gently fold in 3 tablespoons chocolate chips. Spoon batter evenly into muffin tins.
  3. Bake 20 minutes, or until a toothpick inserted near the center comes out clean. Cool completely.
  4. Meanwhile, in a small bowl, combine whipped topping with preserves and mix well. Evenly spread mixture over the cupcakes. Sprinkle remaining chocolate chips over cupcakes, and top each with a cherry half.
