I adjust the recipe just a notch. I took and dip a teaspoon in water and patted down the cookie dough before baking. That made them less puffy.

I made these tonight April 26,2021. They turn out perfect and delicious. So soft and moist. Plus, they hold together without crumbling. I love these cookies.

My goodness people. If this recipe doesn't fit your requirements please find one that does. I don't think it's the test kitchen staff's job to convert every recipe to fit your individual requirements. It's up to you to find recipes that fit your individual needs. There are thousands of recipes out there and information about substitutions. There must be something that will fit your requirements. I'm going to try this recipe as written and I'll bet it will be terrific!

How much Splenda do you recommend using in this recipe instead of the brown sugar? I love that it is low-carb, I just need to make it low-sugar as well since I want to stick really close to my diet. Thanks for posting, these cookies sound so yummy and light!

I used truvia brown sugar and whole wheat flour. Turned out great! Only use 1/4 cup of the truvia though.

If I substitute apple sauce for margarine, agave for brown sugar and coconut flour for regular flour will that impact the carb count?

Wow, these are delisious and soooooooooooooo easy. I cooked on cheap aluminum cookie sheets and they cooled down quickly. I'm not diabetic but on a diet all the time. The only change I made after tasting, I sprinkled some cinnamon sugar on top. Next time will put cinnamon in recipe and some nuts. I made these at midnight on Friday night, that's how much I wanted to try these. Then I thought I had lost the recipe and the name, but found it on my calendar (that's where I put stuff I want to try and have to buy ingredients). I WILL make these again. Two people wanted the recipe!!

Very nice biscuit (or cookie depending on the country you are in). Even my husband (who turns his nose up at anything healthy) liked them. They come out a bit pale (like the picture) and with the second batch I flattened them a little. I also used strawberry yoghurt (I didn't have plain) and I think a few finely chopped strawberries would make a nice addition. I'm going to do that next time.

We haven't tried making these cookies with white whole wheat flour, but we think it should work just fine! However, we do not recommend using all whole wheat flour. If you'd like to use whole wheat flour, we recommend using half white and half whole wheat. Enjoy!
