Keep those chicken breast recipes fresh with our Sun-Dried Tomato Chicken! It's got a fancy feel, but it's perfect for a casual weeknight dinner. The flavorful combo of sun-dried tomatoes, walnuts, and some basil will make you feel like you're at a 5-star restaurant, but really it's just a 5-star recipe that cooks up in 20 minutes, making it perfect for your weekly dinner menu! 

What You'll Need

  • 4 boneless, skinless chicken breasts, about 1-1/4 pounds total
  • 5 sun-dried tomatoes
  • 1/4 cup fresh basil leaves
  • 2 tablespoons walnuts
  • 1 1/2 tablespoons olive oil
  • 1 clove garlic
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon grated Parmesan cheese (optional)

What to Do

  1. Preheat oven to 350 degrees F. Coat a rimmed baking sheet with cooking spray and place chicken on baking sheet. 
  2. In a food processor or blender, process the remaining ingredients, except Parmesan cheese, until thoroughly combined. Spread mixture evenly over chicken breasts.
  3. Bake 20 to 25 minutes or until no longer pink in center. Sprinkle with Parmesan cheese, if desired, and serve.
