This turned out GREAT! My company asked me for the recipe. I didn't have the heart to tell him it was for diabetics. We had this with a side of Green Beans Italiano and Homestyle Smashed Potatoes.

I make this recipe all the time and my family loves it so much. We use this at least once a month as one of our healthy meal choices. I think it goes well with a potato or a salad if you want to go low-carb. We also pair this with green beans and a parmesan pasta dish at times too. It is definitely a keeper!

It would be nice if the nutritional values were on here. Being diabetic and having to count carbs, it's difficult sometimes at just guessing. Sounds like a good and different way to cook chicken.

We have been using this recipe for our Children's meal at church for some time now. Instead of using mayo, we use ranch dressing. Not only the children love the taste, but the adults also, we also use Italian bread crumbs, more flavor.

Made this several times and it is very good. Quick and easy and a family favorite. A quick variation is put a slice of part-skim mozzarella and a few stalks of asparagus, roll it and bake the same. The chicken stays moist and the cheese melts around the asparagus.
