What You'll Need

1 (8-ounce) package frozen sugar snap peas
2 teaspoons canola oil, divided
2 boneless, skinless chicken breast halves (about 8-ounces), cut into 1/2-inch strips
1 red bell pepper, cut into 1-inch chunks
2 cups sliced fresh mushrooms
1/2 teaspoon garlic powder
1/3 cup sweet and sour sauce
1 teaspoon sesame seeds

What to Do

Place peas in a large skillet; add just enough water to cover peas. Bring to a boil over high heat, and cook for 3 minutes; drain peas.
In the same skillet over medium-high heat, heat 1 teaspoon oil until hot. Add chicken and cook for 5 to 7 minutes or until no longer pink in center. Remove chicken to a plate.
Add remaining oil to skillet and heat over medium heat until hot. Add bell peppers, mushrooms, peas, and garlic powder; saute for 4 minutes. Add sweet and sour sauce and chicken to skillet, and cook for 4 to 5 minutes or until heated through. Sprinkle with sesame seeds.
