Simple stir fry recipes like this are always a great way to keep things light and healthy, and they come together in practically no time at all! Fresh garlic and ginger give this dish a great authentic flavor, and the chicken turns out so flavorful and tender from the soy sauce! I love the festive colors of the veggies in this one and plan to make this frequently!

Sounds good. To make stir fry faster, I sometimes use canned chicken breast (skip cooking chicken in Step 1 and add in Step 3) and use the drained broth from the chicken I instead of opening a can or carton.
