Coffee Cake gets served with coffee. That's where it gets its name! :)

So, am I correct in that you cook 1/2 cup oatmeal, cool and add to the wet ingredients?

Yes, you are correct. The oatmeal should be prepared according to the packaged directions before being added to the wet ingredients.

Does this mean you cook the oatmeal before you use it in the cake?

That's how I read it, too. But I would never use quick cooking oatmeal. The old fashioned oats have more nutritional value and do not take much longer to cook than the quick oats.
