This is a pretty good recipe as written but I tweaked it make it even healthier! I leave out the oil and orange juice and substitute with 8 ounces of crushed pineapple with the juices. Because the pineapple is sweet I cut the brown sugar down to 1/4 cup and add a pinch of nutmeg. Turns out great every time! I get 16 muffins out of this recipe.

I would use coconut oil instead of canola oil. More flavor and better for you. These muffins are very good and moist.

I really liked these muffins. They aren't overly sweet but they have a great cinnamon/spice flavor. The texture is perfect with carrots, apples, and nuts. I ate them post-work out and thoroughly enjoyed every bite! I definitely recommend this recipe, even to those who aren't diabetic.
