Rumaki is traditionally made with chicken livers, water chestnuts and pork bacon. Our Out-of-the-Ordinary Rumaki is a much lighter version that you just may like even better, thanks to the terrific sauce.
What You'll Need
1/3
cup ketchup
2 tablespoons white vinegar
1 tablespoon light brown sugar
1/4
teaspoon hot pepper sauce
6 ounces turkey bacon (about 13 strips), each cut in half
1 pound sea scallops, rinsed and patted dry (about 26)
What to Do
In a large bowl, combine the ketchup, vinegar, brown sugar, and hot pepper sauce; stir until smooth.
Roll a piece of bacon around each scallop and secure each with a wooden toothpick. Place in the ketchup mixture and toss gently to coat. Cover and chill for 20 minutes.
Preheat the broiler. Line a rimmed baking sheet with aluminum foil.
Place the bacon-wrapped scallops on the baking sheet, discarding remaining marinade. Broil for 4 to 5 minutes per side, or until scallops are cooked through.
