These moist and crispy Crunchy Chicken Nibblers are sure to be crowd-pleasers! Plus, they are much better for you than the typical deep-fried popcorn chicken. Just because you're watching what you eat doesn't mean you can't indulge the right way!

What You'll Need

  • 1 cup cornflake crumbs
  • 1/2 cup reduced-fat pancake and baking mix
  • 1/2 teaspoon paprika
  • 3/4 pound boneless, skinless chicken breast halves, cut into 1-inch pieces
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

What to Do

  1. Preheat oven to 400 degrees F. Line a baking sheet with foil and coat with cooking spray.
     
  2. In a large resealable plastic bag, mix together cornflake crumbs, baking mix, garlic powder, salt, pepper, and paprika. Add chicken pieces and shake to coat. Place on prepared baking sheet. Spray chicken with cooking spray.
     
  3. Bake 12 to 15 minutes, or until chicken is no longer pink. Serve immediately.

I was wondering what part of the recipe had the most cholesterol? If it is the chicken, then I would have to find something else to try instead to keep that percentage lowest since I am on a strict low-fat diet. This would be the perfect dish to fill up my hungry teens after long summer days of fun.

I cannot imagine that 3/4 pound of chicken provides 15 servings. I suspect it makes 15 individual pieces of the chicken. Which would serve maybe 5 if each person took only 3 little pieces of chicken. You show it served with sauce but the recipe is not here for that which would of course change the calorie count as well.

This recipe is intended to be an appetizer or snack, rather than a full meal, which is why the chicken pieces are smaller. Since everyone may choose a different sauce to serve their chicken nibblers with, we have not included the nutrition or recipe for the sauce.
